Does this stay properly attached to mummy shaped sleeping pads or does the pad need to be rectangular? Any difference between say thermarest x-therm regular vs regular max?

Yes, you can use it with a mummy shaped pad. The XTherm pad is mummy shaped and the XTherm Max is rectangular
